суп.Что необходимо:оливковое масло – рафинированное для жарки, упаковка тонко нарезанного бекона, 2 пучка базилика, 2 средние морковки, петрушка размельченная, лук репчатый, 100 г зеленоватого чеснока, 1 стакан белоснежного сухого вина, маленькая упаковка юный зеленоватой спаржи, маленький цукини, 300 г сладкого горошка, 400 г зеленоватой фасоли, 400 г юного шпината, 200 г хоть какой пасты маленького формата, пучок тимьяна, 2 стебля лука-пореяДля песто: лимоновая цедра - 0,5 ч. л., масло оливковое экстра вирджин, орехи кедровые, 2 ст. л. свеженатертого пармезана и еще незначительно для подачи, 2 ст. л. свежайшей рикоттына 1 порцию1. С тимьяна, петрушки и базилика оборвать листики, стволы отложить. У порея отрезать зеленоватую часть, разобрать ее на листья и кропотливо помыть. Стволы и зеленоватые листья порея свернуть, перевязать хлопчатобумажной нитью.2. Уложить сверток в кастрюлю, конец нити привязать к ручке кастрюли. Залить 2 л прохладной воды. Добавить щепотку соли. Поставить на медленный огонь, довести до кипения, неплотно накрыть крышкой и варить 10 мин. Потом снять с огня, плотно закрыть крышкой и дать стопроцентно остыть.3. У спаржи отрезать вершины, отложить их. У оставшейся части удалить одеревеневшие кончики (приблизительно 5 мм), а потом мелко нарубить. Морковь и репчатый лук очистить, крупно порезать.4. Цукини порезать кубиками со стороной 2 см. У зеленоватой фасоли обломать кончики, крупно ее порезать. Стручки горошка крупно порезать наискосок. Шпинат перебрать, помыть и обсушить. Белоснежную часть порея порезать кольцами толщиной 4–5 мм, промыть от песка и обсушить. Зеленый чеснок мелко нарезать.5. В большой кастрюле разогреть 2 ст. л. оливкового масла. Зубчик чеснока, не очищая, раздавить плоскостью ножа, положить в кастрюлю вместе с беконом. Готовить на среднем огне до того времени, пока бекон не обжарится до хруста и из него не вытопится весь жир. Удалить бекон и чеснок из кастрюли. Убавить огонь до среднего.6. Положить в кастрюлю мелко нарезанную спаржу, морковь и репчатый лук. Всыпать листики тимьяна. Как надо перемешать, чтобы овощи равномерно покрылись жиром. Готовить на очень медленном огне до того времени, пока лук не станет прозрачным и мягким. Ни в коем случае не допускать подгорания. Влить 1 ст. л. белого вина.7. Пока пассеруются овощи, кастрюлю с овощным отваром поставить на сильный огонь, довести до кипения. Влить горячий отвар в кастрюлю с поджаренными овощами. Добавить зеленую фасоль и готовить 5 мин. Положить цукини, горошек, зеленый чеснок и порей. Влить оставшееся белое вино.8. Снова довести суп до кипения. Готовить 3 мин., затем добавить листья шпината, отложенные верхушки спаржи и сразу снять суп с огня. Накрыть кастрюлю крышкой и дать настояться, 4–5 мин.9. Приготовить песто. Положить в чашу блендера листья базилика и петрушки, кедровые орешки, рикотту и натертый пармезан. Добавить щепотку соли и мелко нарезанную лимонную цедру. Взбить до однородности. Влить оливковое масло и взбить снова. Приправить солью и перцем по вкусу, перемешать.10. Поставить кастрюлю с супом на средний огонь, довести до кипения. Добавить пасту. Готовить ровно столько времени, сколько необходимо, чтобы паста сварилась до полуготовности.11. Снять суп с огня, добавить песто и перемешать. Через 5 мин. разлить минестроне по тарелкам, в каждую тарелку положить по 3–4 отложенных верхушки спаржи.
